Review by James: Corky’s BBQ

Hi! This is James.  I wanted to share my latest review with you.  I went to Corky’s a couple of weeks ago and loved it. We were lucky enough to try everything on the menu. We started out with the appetizers. There was a sausage and cheese platter which was delicious. The meat was seasoned perfectly and the cheese tasted like real cheese. We also got something called an onion loaf, which was many tiny onion rings baked together to make the shape of a loaf. That loaf came with a barbeque ranch dressing. The onion loaf was very crispy and the sauce that came with it only made it better.
The hush puppies we had were not dry which is one of the most essential things that you need to worry about when you are cooking hush puppies. These appetizers were all great but the best was definitely the Smoked Sausage. The flavor was amazing.
Then we had our entrees. The whole menu came out to us compliments of Mr. Stovall; Dry ribs, Wet Ribs, Catfish, Pulled Pork, Baked Beans and Macaroni and Cheese. I was eating all of it, and couldn’t find anything wrong with the Dry rub ribs that were perfectly seasoned, and the Wet Ribs that were amazing because of the sweet and savory sauce. Then I dove into some of the Catfish which was very flaky and flavorful. I also made myself a pulled pork sandwich by using one of the scrumptious buttered rolls and putting juicy pork inside. I was getting very full but for a good reason. The sides at Corky’s are also very tasty, but if I had to chose one I would choose the baked beans because of their smoky flavor.  After we finished all of the entrees we all ate  banana pudding which was very good.  The bananas were perfectly ripe. On top of all that, the service was great and the environment was welcoming and cozy. To sum it all up, I would eat at Corky’s every night if I had the chance.

Review by John: Corky’s BBQ

Hey, this is John from J and J Say “To Eat or Not to Eat”. Recently, I ate at Corky’s BBQ in Cordova, TN. I know that almost every Memphian has eaten at Corky’s, but I bet that there are some things on the menu that you haven’t tried yet.  First, I would like to comment on the service, and then I will get to the food. The service was amazing and I mean it. I always had a full glass and the waitresses and waiters were all very friendly. Also, I would like to comment on the atmosphere. It is very kid friendly but at the same time it caters well to adults.

To start, we had the sausage plate, the onion rings, and the BBQ nachos. The sausage plate is a favorite for me. It has sausage, cheese and pickles (try sausage and cheese on a cracker). The onion ring plate is amazing with thin cut onions in a light batter, fried golden brown with a creamy BBQ sauce for dipping. If you have not had the nachos, then I suggest that you try them. (Eat them quickly! The chips will get soggy under all that meat and cheese.)

Next, we tried the entrees. We had wet ribs, dry ribs, pulled pork and catfish. The wet and dry ribs are moist and tender but I suggest the wet ribs. Wet ribs are smothered in sauce making them moist and tender. Dry ribs are cooked with rub (various spices) only and you get to put on your own sauce or not. (People have different favorites. Eat what rib style appeals to you). The pulled pork is tender, moist and smothered in sauce. I suggest ordering the pulled pork sandwich with coleslaw on top. The coleslaw adds a nice cold crunch to the warm sweet meaty sandwich. Last is the catfish. It is meaty, tender, flaky, and could rival any place that specializes in catfish and that is no lie.

Now, let’s go onto the sides. We were served baked beans, coleslaw, potato salad, corn on the cob and mac  n’ cheese. Out of the four, I liked the potato salad the best because it was creamy and had a nice spice melody. Also, the beans are amazing because they are prepared with a sweet, tangy sauce and chunks of BBQ. Last, but certainly not least, out of the many desserts, we had the banana pudding. It was homemade and was topped with whipped cream and a cherry on top.

After all the heartburn, I declare it to eat!!!!!

(A HUGE thank you to Mr. Stovall for hosting us and giving us a dinner we’ll never forget!)

Why I want to do a food blog by James

I wanted to do a food blog because I enjoy eating food. I thought that just eating the food wasn’t enough. I had many thoughts about every restaurant that I go to. So I thought that I should express my ideas. This is why I wanted to do a food blog.

The Elegant Farmer by James

The Elegant Farmer is a home style comfort food restaurant. At Elegant farmer I started with their Caprese Salad. It was probably the best salad that I have ever had in my entire life. All of the flavors were very balanced the EVOO, the tomatos, the pesto, the ricotta cheese. Every element of the salad came together in an awesome way. That was one of the great dishes that I had at Elegant Farmer. The Caprese salad was 8 dollars. Another thing I ate at Elegant Farmer was the Italan sausage. The Italian sausage was a delicious meal. The sausage was on a piece of french bread with spicy mustard and some onions and peppers and pickes. The sausage was 9 dollars. That also came with these awesome new potatoes that were seasoned perfectly and came in a petite bowl. They were so good that I asked myself if I should order one to go, while I was eating my splendid dessert. We decided to get chocolate cake. The cake was three layers and was delicious. It was moist and not dry. This was a spectacular meal at the Elegant Farmer. If you think the prices are kind of high take into account that all the ingredients are made by farmers within a 100 mile radius of the restaurant. This is a definite—TO EAT!!!

The Elegant Farmer by John

Hey! This is John, food blogger and critic on J and J say food blog with my good friend James again. I recently went to The Elegant Farmer for lunch. The Elegant Farmer is kin to its name, it is truly elegant. The food is wonderful, and the place has a nice atmosphere. It is very kid friendly but also can be great for adult dinner dates. I started with an Elegant Salad ($4 ) which consisted of spring greens, bacon, tomatoes, croutons and a vinaigrette or ranch(all locally raised vegetables and homemade dressing) with a side deviled egg (from my family’s farm). For my great entrée I had a patty melt on rye bread with cooked onions and new potatoes. The patty melt ($9) was perfection and the new potatoes were so delicious that they were the first thing that I ate. My mom had the Bahn you, Bahn Me sandwich with chicken, pickled cucumbers, carrots, onions, jalapenos, daikon, fresh cilantro, and sesame aioli on a French roll. It must have been great because my mom cleared her plate (a first for her) and it had a side of fried wontons. For dessert we had the chocolate cake made fresh. It was moist and delicious (I was only allowed one bite). Over all I would say that the Elegant Farmer was…………TO EAT

James-Hot Wing Challenge

Hi! This is James and I love wings. There are many things that I like about wings, but the thing that really makes me love wings is that you can do anything with them. For example, you can make them spicy by tossing them inside of a sauce. We decided to go to go to two different wing places Bosses and Chings Wings. Two totally different wing places. So I am about to show you the differences of both of them.

Bosses: If you like to go to a more clean environment that does not have wings that are very spicy then this is your place. At Bosses everything is very clean. Bosses is more appropriate if you have children that are younger than 9 years old. Also the prices are very reasonable, they don’t give you a certain amount of wings they just give you 1 lb of wings. These are some of the good things about Bosses. There are some bad things about Bosses too. For example Bosses does not have that many varieties of flavors and they only serve party wings. Right as you walk into the building you are forced to eat. As you see there are a lot more good things then bad so I am to say…..To Eat.

Chings Wings: If you do not mind if there are hobos outside of a restaurant and if the parking lot smells like urine then this is your place. Here they have whole wings and party wings. Also the flavors here are amplified to the max if you get hot then expect to taste
extra hot. If you get extra hot expect suicide, if you get suicide just buy a milder flavor because you won’t be able to eat three wings. At Chings you have lots of time to order and there is no rush. Chings has their own signature drink (I won’t reveal the name:)) that is designed to cool your tongue if you eat a very spicy wing. These are
some of the good thing about Chings Wings. There are also some not so good things about Chings. First, Chings is in a remote location. Second, it gets very hot in Chings. The good news is—Chings is opening up a new location in July, so they are going to have lots more customers.

Both places are very good so I am going to have to say……To Eat to Both. But in my opinion the spicier wing is the better wing and
Since Chings had the spicier wing…. I think Chings is a better choice.

John-Hot Wing Challenge

Hey this is John again. I am here to review 2 good wing restaurants here in Memphis, Ching’s Wings and Bosses.

Bosses Pros: clean, low prices, safe neighborhood, lots of flavor, kid friendly, good food, fast service.

Ching’s Wings Pros: good food, whole or party wings, more flavor options, lots of flavor.

Bosses Cons: not as many flavor options, only party wings.

Ching’s Wings Cons: not as clean, pricier, not as safe neighborhood, age 13+ friendly, slow service.

Over all, I think Bosses had the upper hand. Ching’s Wings was spicier and had more flavor options but the spice took over the flavor. Bosses was the perfect combination of spice and was not too over powering. Both places came with fries and celery but Ching’s fries were slightly soggy. Bosses makes their own fries. Bosses is also cheaper than Ching’s and has better combo deals.  Both are………..TO EAT….but………..BOSSES WAS THE BEST

James Los Pilares Memphis,TN

Hi! This is James, food blogger on jandjsayfoodblog.com. I went to my first restuarant with my friend John (other [j] in website) we both chose two totally different meals. To start us off we had the Ceviche, a South American dish that consists of raw fish or seafood. To me the Ceviche had way too much lime and was not that fresh. We also ordered the chorizo cheese dip, chorizo a mexican sausage usually minced. One thing that was very suprising to me was that they put beans inside of the dip. This made the dip more creamy and added flavor. Then we ordered our entree’s, I ordered the Chimichangas, a tortilla filled with meat and cheese deep fried. I found them to be kind of small and not that tasty either. I found it as a very simple dish that went alright along with some guacamole and refried beans. I found the entree to be mediocre, not to its full potential. After that we ordered dessert, we got sopapillas, fried ice cream and flan. I found the sopapillas to be just plain horrible. It was just a sweet tortilla with three scoops of ice cream. That might have been the worst dessert I have ever had in my entire life. The fried ice cream was just a failure. The ice cream was just inside of a sweet tortilla in the shape of a bowl. It was just horrible another one of the awful desserts that I have ever had. The best dessert that I had at the restaurant was the flan. The flan was a custard that is served with honey and cinnamon it was alright. One thing that I would say is that the presentation of each dish is very beautiful but the quantity and the quality is not one of the things that I would pride them on. To me Los Pilares is an okay restaurant but okay is not great so I say …..not to eat.

John Los Pilares – Memphis, TN

Hey! This is John, food blogger and critic on J and J say food blog with my good friend James. Here is my review of our first restaurant, Los Pilares. Los Pilares is a fun, family friendly Mexican restaurant with a great vibe in Memphis. Kids will love it there on Fridays because of live music to dance to. The service is quick and you get free refills constantly (my glass was never empty). With one look at the vast menu you will think, how will I ever decide what to order? For an appetizer James and I split some shrimp ceviche (shrimp cooked in lime juice with no heat), garnished with lime and guacamole. The shrimp was fresh, and the pico de gallo complemented it very well and it was great. Another appetizer we had was chorizo dip, which is basically cheese dip with chorizo, beans and other great spices. It was mild, full of flavor and something the whole family would like. For my main course, I had steak and chicken fajitas ($9.99), which was plenty of food for me. Another great option was the soft tacos with chorizo (Mexican sausage), pescado (simmered fish), or carnitas (a delicious Mexican pulled pork). Every plate comes with a platter of rice, beans, lettuce, pico de gallo (tomato-onion mix), guacamole and sour cream. The presentation of everything is great and looks refer to taste in this case. If you are not up for the fajitas or tacos, they always have quesadillas, burritos and other goodies. The only thing that I was disappointed in was the dessert. We had flan, fried ice cream and a sopapilla and out of the three, flan was the only one worth eating. The fried ice cream was only a deep fried tortilla bowl with ice cream inside. The sopapilla was a fried sweet tortilla with ice cream on top. The flan was the best and was sweet caramel custard with honey sauce. Over all I would say……… TO EAT

Why I wanted to write a food blog: by John

The reason that I wanted to be a part of this blog was to eat strange things that most kids wouldn’t dare try and to show them that a kid like them was reaching out to them to be adventurous eaters. Nowadays, kids will only eat pizza, chicken nuggets, burgers, spaghetti O’s, and other boring food items of that sort. I am not saying that I don’t like those foods, because I do. However, I would much rather have duck confit with a reduction sauce or grilled venison tenderloin. Foods like that are what I was raised with and what I love and I want to bring that love to kids who are picky. They don’t have to love it but if they at least try it they may find a new food to add to their memory bank of good foods to eat. If kids find one good new food, they will be more willing to try more new food and that is my goal; to inspire today’s young eaters.
